For thousands of years honey has been known for its special properties and honey derived from the New Zealand Manuka tree is prized as one of these.

There are a number of different tests and trials being conducted, including newly emerging work on determining what the special nature of Manuka is, that consumers can use to verify the origin and provenance of Manuka Honey. The UMF® rating is one such test. It is a measure of the attributes and values that make up Manuka honey, and assures purity and quality. Only a small percentage of Mānuka Honey contains the characteristics required to be labelled as having the Unique Mānuka Factor (UMF®).

One of the chemical markers used to indicate the level or rating of each UMF® Mānuka honey is Methylglyoxal (MGO). There is a close correlation between the amount of Methylglyoxal (MGO) a honey contains, and it’s UMF® rating, as shown in the table below:
